SUBSTANCE: invention relates to a process for dispersing water insoluble polyphenol particles in a liquid medium, such as a beverage. Method of creating a stable dispersion of micro-dispersed beverage water insoluble bioactive polyphenol by combining a bioactive polyphenol dissolved in an alkaline solution with an aqueous solution of at least one dispersion stabilizer. A composition comprising a dispersion of micro-dispersed water-insoluble bioactive polyphenol (s) and a dispersion stabilizer.
EFFECT: invention provides a suspending insoluble particulate bioactive polyphenols in the beverage and is capable of holding water insoluble bioactive polyphenol from settling on the bottom of the package the beverage.
