FIELD: food industry.

SUBSTANCE: invention refers to fat-and-oil industry. According to the invention, the milk fat manufacture method envisages one or several stages of ruminant animals' milk fat fractionation by way of crystallisation with subsequent treatment. Then milk fat is subjected to one or several stages of fermentative interesterification with subsequent one or several stages of fractionation by way of crystallisation or to one or several stages of fractionation by way of short-distance distillation (molecular distillation). Saturated fatty acids content in the produced fat is less than 50 wt % of the total fatty acids content.

EFFECT: invention allows to manufacture ruminant animals' milk fat with reduced content of saturated fatty acids and cholesterol and produce food compositions with improved nutritive value based on such ruminant animals' milk fat.
