SUBSTANCE: method is proposed for producing fat compositions which are suitable for use as confectionary fat, in which the initial fat composition, which contains S2U, SU2+U3, S3, diglycerides and at least one interesterified fat, containing less than 15 wt % C-12 fatty acid of the total content of interesterified fat, is subjected to catalytic dehydrogenation to obtain the first fat. The first fat is then added to the fat composition. S is a saturated fatty acid with length of the hydrocarbon chain of 14 to 24 carbon atoms, and U is an unsaturated fatty acid with length of the hydrocarbon chain of 14 to 24 carbon atoms. Also proposed is a fat composition and use of the fat composition in confectionaries.
EFFECT: present group of inventions enables obtaining a product which is stable during prolonged storage.
