FIELD: food industry.
SUBSTANCE: method involves chopping the fish fillets into minced meat and washing it twice. Minced fish is mixed with minced chicken liver and heart, blanched steamed and chopped, with the addition of StartStar starting culture and SalamiStar 2 complex food additive. In the minced mixture kosher salt, black pepper, red pepper, nutmeg is added, mixed, formed and a heat treatment is performed. All the ingredients are used at the specified ratio.
EFFECT: method provides an increase in the nutritional value of the product.
