FIELD: food industry.
SUBSTANCE: invention relates to food industry, to confectionary branch and may be used in the technology for preparation waffles with fillings and waffle cakes. The composition for preparation of a fat filling includes a fat component, a sweet agent and a taste-and-flavour composition at the following ratio, wt %: fat component - 43.0-45.0, sweet agent - 51.0-53.0, taste-and-flavour composition - 3.0-5.0. The sweet agent is represented by palatinose. The taste-and-flavour composition contains a mixture including powders of barberries and walnut membranes taken at a ratio of 4:1. The walnut membrane powder is produced by way of membrane milling in the rotor and roller disintegrator into particles sized 20-30 mcm. The barberry powder is produced by way of whole berries milling into particles sized 20-30 mcm; the berries are preliminarily washed with warm water, dried at a temperature of 45-50°C till moisture content is equal to 6-8% and cooled.
EFFECT: ready product quality improvement and energy value and sugar capacity reduction.
