FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to the technology for production of a lipid-protein food product based on a composition of fats and a protein paste of sea hydrobionts. The lipid-protein food product includes initial components represented by butter, refined deodorised vegetable oil, an emulsifier, dry defatted milk and a filler. The filler is represented by a protein paste produced by way of hydrobionts fermentative hydrolysis with moisture content equal to 85 - 90%. The refined deodorised vegetable oil is represented by a spiced-oily extract with antiseptic action. The components are taken at a specified weight ratio.
EFFECT: invention allows to manufacture a lipid-protein food product with increased biological and nutritive value, with high organoleptic properties, with storage life equal to 6 month at a temperature of minus 2°C - minus 5°C; the product does not display modification of structure, quality and safety indices in the process of storage and has resistance to microbial and oxydative spoilage.
