FIELD: food industry.

SUBSTANCE: invention relates to food industry. The method envisages mincing of solid recipe components consisting of fish mince, wheat bread, sauteed bulb onions, ground black hot pepper and culinary salt. One performs chopping wit simultaneous introduction of liquid fat and a suspension consisting of fish broth or water and a protein product powder. Produced mince is moulded in the form of cutlets and mealed. All the ingredients are used at the specified ratio. For powder production fish processing wastes are dispersed and treated with elecro-activated water with pH equal to 13-14; the liquid fraction is separated and treated with ozone. The liquid fraction treated with ozone is divided by way of electrodialysis into a protein-containing product and a lipid-containing product. The protein-containing product is treated with electro-activated water with pH equal to 2-3; a protein product is extracted from the treated mixture by way of ultra-filtration, dried and milled.

EFFECT: invention ensures functional food product manufacture.
