FIELD: food industry.
SUBSTANCE: invention relates to the technology of preserved appetisers production. The method envisages recipe components preparation, beans soaking and blanching, bulb onions cutting and sauteing in vegetable oil. Carrots, garlic, dill and cilantro greens are milled. Ground pumpkin seeds extraction cake is poured with drinking water and maintained for swelling. One mixes the listed components with tomato paste, sugar, salt, coriander, allspice and hot chilly pepper. The resultant mixture is reheated, packed, sealed and sterilised. The components are used at the following expenditure ratio, weight parts: beans - 194.7; carrots - 82.5; bulb onions - 326.1; garlic - 10.3; dill greens - 20; cilantro greens - 20; pumpkin seeds extraction cake - 35.1; vegetable oil - 26.6; tomato paste in conversion to 27% dry substances content - 57.5; sugar - 20.3; salt - 10.2; coriander - 0.71; allspice - 0.31; red chilly pepper - 0.31; water - till the target product yield is equal to 1000.
EFFECT: method allows to produce preserves with usage of beans and uncooked carrots, having balanced organoleptic properties suitable to application as an individual appetiser course.
