FIELD: food industry.
SUBSTANCE: invention relates to the technology of preserved appetisers production. The method envisages preparation of recipe components, soaking and blanching beans, cutting and sauteing (in vegetable oil) bulb onions, milling carrots, garlic, cilantro and dill greens, sunflower flour pouring with drinking water and maintenance for swelling, mixing the listed components with sugar, salt, coriander, allspice and hot chilly pepper, heating the produced mixture, packing, sealing and sterilisation.
EFFECT: method allows to produce new preserves with usage of beans and uncooked carrots, having balanced organoleptic properties suitable to application as an individual appetiser course.
