FIELD: food industry.

SUBSTANCE: invention relates to food industry. The method for isolation of oil and a protein-containing product from high-oleic vegetal material includes such material milling, wet-heat treatment in the presence of a surfactant, forepressing, milling, water extraction of oil from forepressed extraction cake in the presence of a biocatalyst, the produced reaction mixture separation by centrifugation into the soled protein-containing, the oil and the water fractions; during water extraction of oil the biocatalyst used is represented by an enzyme preparation or a multi-enzyme composition containing at least three different carbohydrase activities and introduced in an amount of 0.1-1.0 total cellulolytic activity units per 1 kg of raw material; the process of water extraction in the presence of a biocatalyst is implemented twice using the biocatalyst-containing water fraction produced after separation of the mixture by way of centrifugation for repeated extraction of oil from the solid residue.

EFFECT: invention allows to enhance the quality and nutritive value of the products isolated due to maximum preservation of the raw material useful components.
