SUBSTANCE: invention relates to beverages and other beverage-type products. A beverage-type product includes water, a dye obtained from natural sources and a compound in an amount which is effective for inhibiting decolouration. The dye is obtained from at least one natural source and the compound is selected from a group consisting of an alpha-, beta-unsaturated dicarboxylic acid, an acid selected from a group consisting of cis-aconitic acid and trans-aconitic acid and a combination thereof, and the compound is present in a concentration ranging from about 30 ppm to about 1000 ppm. The compound can be used to inhibit dye decolouration in a beverage-type product in thermal stress. The dye obtained from natural sources is selected from a group consisting of anthocyanins, chalcones such as carthamin and/or a dye obtained by reacting an iridoid and amino acids, and combinations thereof. The product according to the second version contains water, a dye, an unsaturated acid and ascorbic acid. The compound can effectively prevent dye decolouration even in the presence of ascorbic acid which causes decolouration of a dye obtained from natural sources.
EFFECT: invention enables to obtain a beverage-type product with a stable colour during storage.
