FIELD: food industry.
SUBSTANCE: invention relates to natural opacifying system, to method of its production and to beverage product containing such system. Natural opacifying system contains following components in quantities of total weight: from nearly 1 % to nearly 40 % of natural oil; from approximately 1 % to nearly 40 % of natural emulsifier, from nearly 0.05 % to nearly 5 % of natural acid; natural water component and from approximately 5 % to approximately 50 % of natural preservative, wherein natural preservative is represented by ethanol, glycerol or their combination. Method envisages preparation of mixture of natural oil, natural emulsifier, natural acid, natural water component and natural preservative, taken in specified ratio of total weight of natural opacifying system.
EFFECT: production of natural opacifying system and beverage product containing such system, maintaining microbiological stability of at least within 60 days, without using artificial preserving agents, such as benzoates.
