FIELD: food industry.
SUBSTANCE: invention relates to food industry. The composition for production of a bakery product of rye and wheat flour mixture includes medium rye flour, second grade wheat flour and additional raw materials. The additional raw materials are represented by lentils, soya bean flour and dry defatted milk. The components are used at the following weight ratio %: medium rye flour - 59.5, second grade wheat flour - 25.5, lentils - 12.5, soya bean flour - 1.5, dry defatted milk - 1.
EFFECT: invention allows to produce a product with increased biological value, expand the range and the raw material base and use non-traditional raw materials for production of a bakery product.
