FIELD: food industry.

SUBSTANCE: invention relates to meat industry and may be used for production of cooked-and-smoked, semi-smoked, raw smoked and raw dried sausages as well as delicatessen meat products. The composition contains a polymeric dispersion and a modifier. The modifier is represented by colloidal solution of silver nano-particles in an amount of 1-10 wt % of the total weight of the composition. The polymeric dispersion is represented by a vinyl acetate copolymer dispersion with dibutyl maleate or a vinyl acetate copolymer dispersion with vinyl versatate, or a mixture of the vinyl acetate copolymer dispersion with dibutyl maleate with the vinyl acetate copolymer dispersion with vinyl versatate. The produced composition is used to form a protecting coating wherein the meat product undergoes technological operations with subsequent storage and marketing.

EFFECT: composition ensures meat products weight losses decrease, storage life increase, protection against development of mould, yeast and other undesirable microflora on the products surface.
