FIELD: food, meat and dairy industry.

SUBSTANCE: composite comprises polymeric dispersion and smoking preparation "Zhidky dym Plus" as a modifying agent taken in the amount 0.1-10.0 wt.-% of the total mass of composite. As a polymeric dispersion invention uses dispersion based on vinyl acetate or its copolymers, or their mixture with an aqueous dispersion of butyl rubber. The composite can comprise additionally food dye in the amount 0.3-0.5 wt.-% of the total mass of dehydroacetic acid sodium salt in the amount 0.2-2.0 wt.-% of the total mass. Method involves drying the food product surface, applying on it the composite for protection of foodstuffs comprising polymeric dispersion and a modifying agent, and formation of protective envelope from it. Composite and method provides excluding the possibility for destruction of coating at high temperatures, to reduce steam-permeability of coatings, swelling in water and fats, to enhance strength of coating in retaining their sufficient deformability being without cracking and breaking integrity on uneven sites, and to simplify utilization.
