SUBSTANCE: according to the first version, the composition includes food slices (fried in oil with moisture content equal to nearly 16% and Aw value equal to nearly 0.7) and nearly 5-35% of a plasticiser applied onto the fried slices. The fried food slices with the plasticiser applied onto them have moisture content equal to nearly 12% or less, Aw value being nearly 0.65 or less. According to the second version, the composition additionally contains one or several edible ingredient compatible with the fried food slices. During the composition preparation the food slices are fried in oil at a temperature of 110-250°C; the plasticiser is applied onto 75-95°C hot slices. The composition preparation method does not envisage preserving agents usage.
EFFECT: invention allows to produce compositions having the required structure and attractive meat-like appearance, stable during storage because the compositions do not perish as a result of undesirable growth of microorganisms.
