FIELD: food industry.
SUBSTANCE: inventions group is intended for usage in food industry during meat analogues production. The method envisages meat emulsion moulding, treatment till production of one or more pieces of a meat emulsion, the meat emulsion pieces drying. The dry pieces of the meat emulsion in an amount of 45-70 wt % are combined with one or more hydrating agents for food products manufacture. The hydrated dried pieces of the meat emulsion have moisture content equal to 55-65 wt %. The food product contains protein in an amount of 29 wt % and fat in an amount of 4-9 wt %.
EFFECT: invention ensures manufacture of food products having meat appearance and texture.
