FIELD: food industry.

SUBSTANCE: invention is intended for use in food industry and may be used for automated mechanical treatment of carcass meat part being serially transported. The device (1) contains a transportation device (2), a cutting device (3) with a cutting heat (31) and a control device (5). The cutting device (3) has a retaining and guiding device (4) whereon, capable of motion along a straight trajectory (40) at a fixed angle (a) of the guide slant, a cutting heat (31) is installed to perform separation cutting operations askew relative to the straight transportation direction (20). The transportation belt (21) forming part of the transportation device (2) and transporting carcass meat parts (6) lying thereon continuously passes through the retaining and guiding device (4). The cutting element (32) is represented by a rotary disc blade (321) the position whereof in terms of height relative to the transportation belt (21) in the course of cutting is limited. During performance of separation cutting operations, the control device (5) carries out correlation of the cutting head (31) movement speed component (VT) oriented in the transportation direction (20) with the speed of the carcass meat parts (6) transportation in the transportation direction (20). In particular, the device (1) is used for fish fillet (60) skinning with the tail end part (610) of fish fillet (60) removed by way of a skew cutting operation resulting in formation of the fillet end that is skewed at an angle and serves as an auxiliary means for drawing skin to be separated (64) into the drawing-in gap of the skinning machine.
