FIELD: food industry.
SUBSTANCE: method for solid emulsion production by way of water and fat phases emulsification; the water phase is represented by 0.5-3.0 wt % of sodium alginate solution; the fat phase is represented by sunflower oil dispersion with 2.0-7.5 wt % of calcium salts; one performs the water and fat phases emulsification at the following ratio (90.0÷60.0):(10.0÷40.0) wt %:wt %, respectively. The solid emulsion contains the water phase with 0.5-3.0 wt % of sodium alginate and the fat phase containing sunflower oil dispersion with 2.0-7.5 wt % of calcium salts, the ratio of the water phase to the fat phase being (90.0÷60.0):(10.0÷40.0) wt %:wt %, respectively.
EFFECT: invention allows to produce a solid emulsion characterised by a stable aggregative system unexposed to stratification and coalescence; the emulsion may be efficiently used in the technological process.
