SUBSTANCE: ice cream production mixture contains dry defatted milk and 42%-fat dry milk cream, fructose, vanillin, ISC 06001 stabiliser-emulsifier and autumn berries dry extract. The components are taken at the specified weight ratio. The autumn berries dry extract is represented by dry extracts of sea-buckthorns, hawthorn berries, rosehips, red bilberries or snowballs. The invention allows to increase food and biological value of ice cream produced and improve organoleptic indices.
EFFECT: mixture ensures the possibility of long-term storage.
