FIELD: food industry.
SUBSTANCE: invention relates to dairy industry. Milk is disinfected by way of radiation in a continuous flow in a 3-5 cm thick layer at a rate of 4-5 cm/sec with subsequent radiation with ultraviolet and infrared rays during 20-50 minutes at the radiator height over the milk surface equal to 30-35 cm.
EFFECT: invention ensures enhancement of the method efficiency and pasteurised milk quality, milk storage life increase up to 30 days with simultaneous preservation of biologically properties due to complete milk disinfection.
