FIELD: food industry.
SUBSTANCE: inventions are intended for use in meat industry. Methods and systems are provided to separate muscle tissue from connective tissue. Amount of muscle tissue, which contains both muscle protein and connective tissue, is reduced. Muscle tissue is mixed with aqueous dissolvent to create liquid mass. Liquid mass is pumped through pipe, then through at least one narrowing, thus speeding up liquid mass in direction of liquid mass flow so that significant fraction of connective tissue does not break, and significant fraction of muscle tissue tears off. Muscle protein is disconnected from connective tissue using separating device.
EFFECT: inventions make it possible to produce and use muscle proteins, having their functional and nutrient properties.
