FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to a food product taste modification method. The food product is exposed to a pressure of 1000 - 6000 bar together with a solid composition containing a substance; the substance is extracted from the solid composition simultaneously with the impregnation stage. The method involves selection of the substance subjected to extraction from the solid composition, determination of a pressure suitable for the chosen substance extraction and partial immersion of the solid composition into liquid chosen for the substance extraction.
EFFECT: food product taste modification.
