FIELD: food industry.
SUBSTANCE: diffusion juice purification method envisages implementation of preliminary progressive defecation in a predefecator, simultaneous defecosaturation during preliminary defecation, main defecation, first saturation, filtration, defecation before second saturation, second saturation and filtration. Immediately before simultaneous defecosaturation one adds into juice ceramsite dust in an amount of 0.10-0.15% of the beet-root weight.
EFFECT: diffusion juice purification method allows to enhance purification effectiveness, decrease HMC and calcium salts content, reduce purified juice colourity, increase sugar sand yield and improve its quality.
