FIELD: sugar industry. SUBSTANCE: method involves providing progressive first defecation, warm and hot principal defecation, first saturation, and filtration; subjecting filtered juice to defecation, second defecation and sulfitation; introducing claydite dust in an amount of 0.01-0.03% by weight of juice weight; settling juice and directing clarified juice t sulfitation zone; introducing above mentioned amount of claydite dust into sulfitated juice. EFFECT: reduced content of calcium salts in purified juice, diminished coloration and reduced deposition of calcium salts on heat-exchange surface of evaporating unit.
