FIELD: food industry.
SUBSTANCE: method involves seeds cleaning from adventitious and mineral impurities with subsequent thermal treatment of cleaned seeds with IR-radiation with radiant flux density equal to 32-48 kW/m 2 till the temperature is equal to 85-95°C during 60-100 sec.
EFFECT: invention usage will allow to reduce insoluble protein fraction content in melon seeds due to short-term thermal treatment with IR-radiation, enhance brittleness of fruit shell due to its moisture content reduction.
