FIELD: food industry; methods of production of alimentary fibers from a beet presscake.
SUBSTANCE: the invention is pertaining to the field of food industry, in particular, to the method of production of alimentary fibers from the vegetable raw. The method provides for commixing the presscake with the anolyte having pH 4.0-5.0 and oxidation-reduction potential from +800 up to +900 mB and the produced by treatment of the sodium thiosulfate solution in the anodic chamber of the diaphragm electrolyzer and its comminution up to the preset sizes of the particles. Conduct the twofold extraction of the comminuted mass with the help of the indicated anolyte at the temperature of 20-25 °C. The extracted mass is subjected to the deodorization at the temperature of 60-65 °C by its commixing with the same anolyte and to the subsequent dehydration. Then the dehydrated beet fibers are mixed with the comminuted rind of the orange and powdery sweetener from stevia in amount accordingly of 5-10 and 0.05-0.10 % to the mass of the dehydrated fibers and is dried at the temperature of 55-60 °C up to the humidity of 4.5-5 %. The product is comminuted and scattered. The presented method allows to receive alimentary fibers from the beet presscake with the high nutritional value and the improved taste properties, to expand the range of the dietetic foodstuffs and the treatment-and-prophylactic direction products, to realize the complex and wasteless technology of vegetable raw reprocessing.
EFFECT: the invention ensures production of the alimentary fibers from the beet presscake with the high nutritional value and the improved taste properties, to expand the range of the dietetic foodstuffs and the treatment-and-prophylactic direction products, to realize the complex and wasteless technology of vegetable raw reprocessing.
