FIELD: food industry.
SUBSTANCE: food product sterilisation method consists in placement of the food product in package with further heating of the package containing the food product. The package is designed as having at least one wall made of polymer film intended for food products packaging with formation of a hole in the central part of such wall that is tightly overlapped with a piece of film for food products onto the surface whereof (at least along the perimeter) one preliminarily applies a glue layer; then the package is positioned inside the heating device. The above polymer film wall is positioned on top; then the package containing the food product is heated to a temperature exceeding the boiling point of the liquid contained in the food product and to a temperature whereat the glue layer softens with formation of passages therein under the pressure of steam generated by boiling liquid, such passages serving for stream release and simultaneous removal of air from the package. The food product in the package is sterilised with steam with the package simultaneously blown with steam to impart a domed shape to the polymer wall. Then heating is discontinued; the package is chilled which provides for steam condensation; due to that pressure in the package is decreased to a value below the pressure of atmospheric air surrounding the package; the piece of film is pressed to the polymer film wall; thus, with the glue layer compressed, one closes the passages in the glue layer, tightly sealing off the package containing the food product.
EFFECT: invention allows to accelerate and simplify the sterilisation process.
