FIELD: food industry.

SUBSTANCE: invention relates to technology of production of preserved second courses. Formula components are prepared for production of preserves "Stewed duck with cabbage". Duck is cut and fried in rendered fat. Fresh ornamental cabbage is chopped and frozen. Onions are cut. Wheat flour is sauteed. Herbs are cut. Listed components are mixed with sour cream, sugar, salt, citric acid, cumin, red hot pepper, bayberry and bayleaf. The produced mix and bone broth are packed, sealed and sterilised.

EFFECT: method makes it possible to produce new preserves using non-conventional vegetable stock without changes in organoleptic properties of a finished product.
