FIELD: food industry.
SUBSTANCE: invention relates to technology of production of preserved second courses. Formula components are prepared for production of preserved rolls. White bread is soaked in drinking water and chopped. Cooked sausage is chopped. Listed components are mixed with hen eggs, salt and mustard to produce mince. Fresh ornamental cabbage is separated into leaves, frozen and defrosted. Mince is formed into cabbage leaves to produce rolls. Apples are cut. Rolls, apples and drinking water are sealed and sterilised.
EFFECT: method makes it possible to produce new preserves using non-conventional vegetable stock without changes in organoleptic properties of a finished product.
