FIELD: food industry.
SUBSTANCE: during culinary product manufacture one performs fish raw materials and components preparation, fish mince preparation and shrimp filling preparation. Then one performs the semi-product moulding in the form of a small basket with shrimp filling inside, mealing, sparkling with sesame seeds, thermal treatment, freezing, packing, transporting and storage. All the components are used at the specified ratio.
EFFECT: manufacture of a fish mince culinary product for school alimentation.
