FIELD: food-processing industry.
SUBSTANCE: invention refers to food-processing industry and namely to the processing of uncooked food by using non-conventional types of raw food. The method consists of chopping of hard formula components, including minced fish, fresh onions and cooking salt. The obtained blend is chopped with simultaneous introduction of liquid formula components including sunflower oil and fish broth or water. Uncooked food is formed, bread in bread crumbs and preserve by freezing obtaining the target product. Among hard ingredients they additionally introduce meat of rapa whelk processed by carbon dioxide under a pressure of 4.1 Mpa during 25-30 minutes, dry whey protein concentrate, fresh white cabbage and fresh potatoes. Among liquid formula ingredients they additionally use CO2-extract of schizandra, CO2-extract of black hot pepper at the certain ration of components.
EFFECT: increase of nutrition value and water-retaining capacity of the uncooked food.
