FIELD: food industry.
SUBSTANCE: one proposes a method for manufacture of a food product of husked sunflower seeds. The method involves seeds boiling, inoculation with mycelium of at least one fungus chosen from Pleurotus ostreatus, Rhizopus oligosporus and Actinomucor elegans. Inoculation is performed by way of fungus introduction into seeds in an amount of 1-4% of the seeds weight. Then one performs fungus mycelium incubation and mycelium thermal inactivation by way of treatment with unsaturated steam.
EFFECT: enhancement of the product nutritive value, the product organoleptic properties improvement, the technology improvement and performance increase.
