SUBSTANCE: method includes sunflower extraction cake decondensation, decondensed sunflower extraction cake sterilisation by way of steaming until a temperature equal to at least 50°C is reached, sunflower extraction cake inoculation with xylophilous fungus mycelium under non-sterile conditions, fungus germination in sunflower extraction cake under non-sterile conditions until primordia formation, thermal inactivation of the mycelium to ensure elimination of irrelevant microflora and the produced product drying. Inoculation is performed with mycelium introduced into sunflower extraction cake in an amount of 1-4% the extraction cake weight.
EFFECT: product digestibility and safety enhancement and storage life extension, increasing the product protein content and ensuring a balanced amino acid composition as well as the technology simplification.
