FIELD: chemistry.
SUBSTANCE: invention relates to a method of producing phytosterol by extracting sulphate soap and treating with an organic solvent, wherein before extraction the sulphate soap is dissolved in water until complete dissolution, followed by adding alcohol and petrol to the solution, separating the petrol extract from the alcohol-soap solution, subjecting the alcohol-soap solution to multi-step extraction with petrol, washing the petrol extract, concentrating by distilling the solvent to 1/3 of the total volume of the extract, cooling and crystallising.
EFFECT: high output and purity of phytosterol.
