FIELD: food industry.

SUBSTANCE: indicator composition contains Sudan III colouring agent, monoatomic alcohol, low-molecular glycol and/or low-molecular polyglycol at the following components ratio, wt %: Sudan III colouring agent - 0.1-0.4; monoatomic alcohol - 5.0-19.0; low-molecular glycol and/or low-molecular polyglycol - 12.0-65.0; purified water - balance. The said composition production method is implemented by way of the components mixing at room temperature without forced heating; one sequentially loads low-molecular glycol and/or low-molecular polyglycol, Sudan III colouring agent and 0.5 part of monoatomic alcohol into the cold mixer. The produced mixture is homogenised during no less than 40 minutes. One simultaneously mixes 0.5 part of monoatomic alcohol and purified water in the other vessel with a stirrer during 20-30 minutes. The ready mixture is pumped from the vessel over the cold mixer; both parts of the composition are homogenised during no less than 15 minutes. After the mixing process termination one performs control of the composition quality.
