FIELD: food industry.
SUBSTANCE: invention relates to jelly sweets with fluid filling and to such sweets manufacture method. One proposes deposited sweets including fluid filling containing acid, an external jelly coating completely enclosing the fluid filling and containing pectin, sugars or sugars substitutes and at least one acid; the coating pH value being 3 - 3.5, the filling pH value being 2.2 - 2.8; the filling is fluid and fails to contain jellying agents or sugar crystals; the filling accounts for at least 7 wt % of the total sweet weight. One proposes a filling-containing jelly sweets manufacture method involving the following stages: a) production of a liquid composition for manufacture of coating containing sugars or sugar substitutes, acid and pectin; b) manufacture of another fluid composition for production of filling containing at least one acid; c) deposition of the composition a) and b) into moulds for manufacture of sweets including coating and filling; d) leaving the coating for hardening; e) the sweets retrieval from the moulds; f) the sweets packing, the coating pH value being 3 - 3.5, the filling pH value being 2.2 - 2.8; the filling is fluid and fails to contain jellying agents or sugar crystals; the filling accounts for at least 7 wt % of the total sweet weight.
EFFECT: provision for manufacture of jelly sweets with fluid filling where filling does not leak during manufacture or before consumption.
