FIELD: food industry.
SUBSTANCE: method provides for joint mixing of chewing gum base, bulk sweetener syrup, powder-like bulk sweetener and soluble protein at minimal temperature of 55°C, obtaining of warmed up compound and its compound moulding in cavity of shape needed. Moulding is performed by compound filling into at least part of the cavity or by skimping of compound in powder-like substance layer. After that the compound is cooled down so it keeps the shape and taken out of the cavity.
EFFECT: invention allows to produce multi-layered moulded chewing gum with help of moulding or skimping method.
