FIELD: food industry.
SUBSTANCE: method envisages recipe components preparation, bulb onions cutting and sauteing in animal fat, turnip cutting and blanching, carrots blanching and cutting, fresh ornamental cabbages cutting and freezing, pork, partridge meat, paprika, tomatoes and greens cutting. Then the listed components are mixed with salt, CO2-extract of pyrolysis wood, black hot pepper and laurel leaf. The produced mixture and bone broth are packed, sealed and sterilised. The components are used at the following expenditure ratio, weight parts: partridge - 2000; pork - 39.8-50; animal fat - 167; ornamental cabbages - 100; carrots - 46.8-48; bulb onions - 93.6-94.8; tomatoes - 77; paprika - 140; turnip - 37.2; greens - 12.5; salt - 12; CO2-extract of pyrolysis wood - 0.004; black hot pepper - 0.4; laurel leaf - 0.1; bone broth till the target product yield is equal to 1000.
EFFECT: production of new preserves with usage of non-traditional vegetal raw materials.
