FIELD: food industry.
SUBSTANCE: one performs bulb onions cutting and sauteing in animal fat, rutabaga cutting and blanching, carrots blanching and cutting, fresh ornamental cabbages cutting and freezing, pork, partridge meat, paprika, tomatoes and greens cutting. Then the listed components are mixed with salt, CO2-extract of pyrolysis wood, black hot pepper and laurel leaf. The produced mixture and bone broth are packed, sealed and sterilised.
EFFECT: method allows manufacturing new preserves with the usage of non-traditional vegetable raw materials.
