FIELD: food industry.
SUBSTANCE: invention relates to production of fruit and berry juices. The method is characterised by the fact that ashberries are ground to produce pulp. Then pulp is soaked for 40-120 min at temperature of 35-55°C with a complex ferment preparation Ondea Pro, having cellulase, xynalase, proteolytic, alfa-amylase, lipase, pullulanase activities, with its dosing of 1-2.5 kg/1000 kg. Then juice is separated from pulp, and thus free-run juice and squeezed juice are produced. At the same time ashberry juice with use of ferment preparation consists of free run juice and squeezed juice.
EFFECT: invention makes it possible to increase juice yield 1,3 times, yield of dry substances into juice - almost twice, content of total sugar in juice in terms of saccharose -1,7 times, and yield of phenol compounds into juice - 1,6 times.
