FIELD: food processing industry.
SUBSTANCE: claimed composition contains (pts): endopolygalacturonase 0.176-0.40; endo-beta-glucanase 11.0-30.8; protease 1.76-4.94; pectin esterase 3.96-10.6, and amylase 2.2-7.7. Composition is used in amount of 0.015-0.019 l per 100 kg of ground apple raw materials. Fermentation is carried out at 39-41°C for 90-120 min under stirring. Method of present invention males in possible to increase juice yield by 140-145 %, to decrease juice viscosity by 58.5 %; to increase organic acid content by 22.3 %; to increase dry matter content in juice by 7 %.
EFFECT: apple juice with improved organoleptic characteristics and prolonged storage time.
