FIELD: food industry.
SUBSTANCE: invention relates to berry concentrates production. Method for production of a concentrate of stone bramble (Rubus saxatilis) berries envisages berries preparation, milling and pulp production. Mixture of enzyme preparations of pectolytic enzyme VINOFERM zymex and cellulolytic enzyme preparation BREWZYME BGX with concentration 0.01 % to pulp weight is added to the pulp at ratio of enzyme preparations equal to 1:1, under the following conditions: for 1–1.5 hours at temperature of 40–45 °C under continuous stirring hydrolysis is carried out, heated to temperature of 70–75 °C, held for 5–6 minutes, solid is cooled down to 30–35 °C, solid particles are separated from the liquid fraction by pressing, the liquid fraction is concentrated under vacuum at temperature 55–65 °C, at that content of dry substances in the concentrate is equal to 42.3–45.0 %.
EFFECT: invention increases output of juice of berries by 18 %, compared to output of juice without treatment with enzyme preparations, as well as obtain a concentrate of high quality.
