FIELD: foodstuffs.
SUBSTANCE: invention relates to the non-alcoholic beverage industry. Proposed is a non-alcoholic beverage based on fermented black chokeberry juice, made from fermented black chokeberry fruits, sugar, drinking water, lemon juice, citric acid; wherein in order to produce the fermented black chokeberry juice, frozen black chokeberry berries are thawed and then crushed to particle sizes of 2 to 5 mm resulting in pulp, said pulp is held for 10 to 15 minutes at a temperature of 20 to 22°C, the "Extrapect Color" enzyme preparation is introduced thereto in the amount of 0.05 g per 1 kg pulp, hydrolysis is conducted for 1 to 2 hours at a temperature of 20 to 22°C while stirring constantly, followed by adding "France Superstart" wine yeast in the form of a yeast starter in the amount of 0.5 g per 1 kg of pulp while stirring constantly; after 3 days of fermentation, the wort is separated from the pulp and further fermented according to the white method at a temperature of 22 to 24°C until fermented dry, wherein the following ratio of the initial components is used, kg per 1,000 dm3 finished product: fermented black chokeberry juice 100 to 110; lemon juice 95 to 105; sugar 41 to 46; citric acid 0.1 to 0.3; drinking water the rest.
EFFECT: invention allows for creation of a functional product with high quality and consumer properties and can be recommended for producing non-alcoholic beverages.
