FIELD: food industry.
SUBSTANCE: method envisages raw materials washing and milling, milled mixture maceration in the presence of an enzyme preparation. Fruit raw materials are represented by grapes. Maceration is performed in two stages; at the first one - in the presence of an enzyme Fructozym P6-L, at the second one - in the presence of Fructozym P6-L and CelloLux-A enzyme preparations. Then one performs thermal treatment, pasteurisation of a juice semi-product and diffusion juice; remaining refuses are dried and milled.
EFFECT: invention allows to more effectively and efficiently use fruit raw materials, increase the yield of a juice semi-product from fruit raw materials as well as increase antioxidant substances content in semi-products.
