SUBSTANCE: inventions group relates to food industry. The system (1) for pasteurisation of a liquid product (P) consists of at least one liquid pumpable component, contains a vessel (6) for supply of a non-pasteurised product, an inlet pipeline (8a) for transportation of the non-pasteurised product, a circuit (25) for pasteurisation of the product (P) an inlet pipeline (8b) for transportation of the pasteurised product. The pasteurisation circuit (25) contains a buffer accumulation tank (2) where the product (P) is retained during the preset constant maintenance time with a view of pasteurisation and ensuring variable flow of the product (P) through the buffer accumulator tank (2). Positioned in the buffer accumulator tank (2) is at least one, in particular - replaceable fender element for the product stream direction control. Method for pasteurisation of the liquid product (P) consisting of at least one liquid pumpable component by way of usage of the said system. The non-pasteurised product is supplied into the buffer accumulation tank (2) of the pasteurisation circuit (25) and maintained there during the preset constant maintenance time with a view of pasteurisation and ensuring variable flow of the product (P) through the buffer accumulator tank (2). Then the ready product is supplied into the outlet pipeline (8b).

EFFECT: inventions group ensures increased flexibility during pasteurisation, in particular - in the start-stop mode of the beverage preparation system usage due to usage of an active buffer for the product being manufactured.
