FIELD: food industry.
SUBSTANCE: whole blood is treated with a preservative stabiliser consisting of a mixture of 4% sodium citrate solution and 0.07% citric acid solution. The weight fraction of citric acid of the total weight of the preservative stabiliser makes 0.035%. Erythrocyte mass is isolated by way of separation with separation factor equal to 2000 units. One performs hydrolysis at a temperature of 35°C, the process duration equal to 12 h, with the ratio of erythrocyte mass to acid equal to 10:1. The acid is represented by 5% acetic acid or 10% citric acid or 10% acetic acid. The product is subjected to sublimation drying.
EFFECT: invention allows to produce a product with high biological value for iron deficiency prevention, such product containing no harmful admixtures.
