FIELD: food industry.
SUBSTANCE: invention relates to production of canned concentrates of first lunch dishes. Method envisages preparation of recipe components, cutting and sauteing in butter, bulb onions, fresh ornamental cabbages chopping and freezing, fish fillet, white mushrooms, brined cucumbers and parsley greens, wheat flour sauteing, listed components mixing with cucumber pickle, acetic acid, black hot pepper and Laurel leaf, produced mixture and fish broth sealing and sterilisation.
EFFECT: invention allows to get new canned food using nonconventional vegetable raw materials without changing organoleptic properties of target product.
