SUBSTANCE: invention relates to production method for preserved concentrates of first course dinner dishes. Method comprises preparation of recipe ingredients. Cutting and frying in melted fat of sea scallop meat and tomatoes, cutting and sautéing in melted fat of carrots, parsley roots, and bulb onions, cutting and blanching potatoes, cutting and freezing fresh ornamental cabbages and green kidney beans, freezing fresh green peas, cutting parsley green is performed. Listed components are mixed with sour cream, salt, and hot black pepper. Produced mixture and fish broth are packed, sealed, and sterilised.
EFFECT: method allows to produce new preserves with usage of non-traditional vegetable raw materials.
