FIELD: food industry.
SUBSTANCE: method involves dispersion of shell-containing raw material, its blending with a preserving agent, packing the produced mixture with its subsequent closing. The preserving agent is represented by catholyte preliminarily produced in the cathode chamber of a diaphragm electrolyser by way of treatment of water solution of an electrolyte with initial concentration 0.6-1.2% till pH is 12.6-12.8 and oxidation-reduction potential is minus 800 - minus 1000 mV relative to the silver-chloride reference electrode. Initial concentration of the electrolyte in the anode chamber is chosen in the range of 2-10%.
EFFECT: invention allows to preserve shell-containing raw material without aggressive reagents utilisation.
